In these elevations’ coffee grow slowly due to the altitude, allowing additional time for the tree to develop the best flavors. This particular variety comes from the area of Anfilo, a mountainous region of Wollega, where coffee has been grown in its original (genetic) form, mostly wild, and sun-dried for more than 500 years. This processing (preparation) gives it an even more spicy, complex aroma profile. The body, the volume of the coffee is built up and a fine sweetness is anchored.
